To make eggs even more appealing, the International Journal of CardiologyVolume 99, Issue 1, 10 March 2005, Pages 65-70 reports a study on egg consumption and endothelial function: a randomized controlled crossover trial concluded:“... dietary cholesterol may be less detrimental to cardiovascular health than previously thought.

A dozen hens lay many more eggs than we can consume. I've been giving away most of them. I'm considering selling the excess to recoup part of the expense.
